Description

This Paleo Quick Bread recipe can be made in less than 30 minutes and is a healthier alternative to the usual slice of bread. Made with Bob Red Mill’s Paleo Baking Flour, which takes out the majority of the work.

Ingredients

  • 3-¾ cups Bob Red Mill's Paleo Baking Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • ¾ cups Coconut Oil, Melted And Cooled
  • ⅓ cups Water

Preparation

Heat oven to 350ºF.

Combine all ingredients in a large bowl. Pour mixture in a loaf pan (I used 8X4 sized pan), the smaller the better with this amount of mixture.

Bake for 20–30 minutes (it took me 30 minutes to bake thoroughly as I am in higher elevation). Around the 20-minute mark, poke a knife throughout the bread to see if it’s been cooked thoroughly. If raw mixture sticks to the knife, it’s not ready yet.

Remove from oven when complete and allow to cool.

I posted a review about my experience making this bread… why is it not showing up? I could understand if it was held because I had not yet tasted it, but I was literally unable to make the recipe as BREAD… so the review stands. Incidentally, I have since tasted it as pie crust and it dry and crumbly and mostly flavorless but at least I didn’t have to throw away nearly 4 cups of expensive baking mix.

I think that this recipe leaves out the eggs? It falls apart as crumbles when I try to make. Does it not need egg or egg substitute? Hads anyone else tried or found the same issue?
