Description

Another version of banana bread. This time with dates and maple syrup (instead of sugar).

Ingredients

  • 4 whole Ripe Bananas, Peeled
  • 6 whole Dates
  • 4 whole Eggs
  • 2 Tablespoons Maple Syrup
  • 1 teaspoon Vanilla Extract
  • ¼ cups Coconut Oil
  • ¾ cups Almond Flour
  • ¼ cups Coconut Flour
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1-½ teaspoon Cinnamon
  • ½ teaspoons Nutmeg
  • ¼ cups Dark Chocolate Chips

Preparation

Preheat oven to 350 F.

Chop the dates into small pieces. Add the bananas and chopped dates into your stand mixer. Blend together. Add the eggs, one at a time, to the banana mixture. Next add the maple syrup and vanilla extract. Blend together.

If the coconut oil is solid, soften it by heating it in the microwave for about 20 seconds so it is a liquid. Add the coconut oil to the banana mixture while the machine is on. Do this to prevent the oil from becoming a solid as it mixes with the cold ingredients in the mixer.

Sift the almond flour, coconut flour, baking soda, salt, cinnamon and nutmeg into the banana mixture and blend well. Next, add the chocolate chips to the mixture and stir to incorporate.

Pour the mixture into a parchment paper lined standard size bread pan. Bake for 55 minutes or until a toothpick comes out clean when inserted. Remove from oven. Allow to cool completely before serving.
