Description

The perfect pumpkin bread for the fall/winter season. The orange glaze makes this taste gourmet, when really it is simple!

Ingredients

  • FOR THE BREAD:
  • 1-½ cup Flour
  • ½ teaspoons Baking Powder
  • ¾ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • ½ teaspoons Ground Ginger
  • ¼ teaspoons Nutmeg
  • ¼ teaspoons Allspice
  • 1 teaspoon Cinnamon
  • 10 Tablespoons Butter, Softened
  • ½ cups Brown Sugar
  • 1 cup Sugar
  • 2 teaspoons Orange Zest
  • 3 whole Eggs
  • 1 cup Pumpkin Puree
  • _____
  • FOR THE GLAZE:
  • ¾ cups Water
  • 2 Tablespoons Fresh Ginger
  • 1 whole Orange, Zested
  • ½ cups Sugar

Preparation

To make the glaze, whisk together the water, orange zest, and ginger. Simmer for 5 minutes. Pour through a fine sieve. Use half of this water mixture and add sugar. Cook for 2 minutes to thicken. Brush warm loaf with the glaze.

To make the bread, sift together the dry ingredients. Set aside. Blend butter, sugars, orange zest, and eggs. Add pumpkin. Fold into the flour mixture.

Bake at 350 degrees for 55 minutes, in a prepared loaf pan.

Yummness! I entirely planned on making the glaze, but by the time it came out of the oven we couldn’t wait to slice into it… It’s fantastic! This is my new go-to recipe for pumpkin bread. I had hesitations about zesting orange into the dough, but it really rounded out the flavor. It’s moist, flavorful, and next time around I’ll have to plan ahead a bit better and try it with the glaze. :)
