I made this bread yesterday for my husband who is a cranberry orange fiend. I altered the quantities of ingredients as follows: I used a tbsp of orange zest, 2 1/4 tsp yeast, 2 tbsp of butter, 3 tbsp honey, all purpose flour instead of bread flour (I used King Arthur unbleached AP flour which has a slightly higher gluten content than bleached AP flours,) and a heaping 1/2 c of dried cranberries. My husband loves Thomas’s holiday season cranberry orange English muffins, so I was trying to get a little closer to that flavor. I don’t have a bread maker so I baked the bread in a 9×5 buttered pan in a 350 oven for approximately 35 minutes. I also put an empty pan in the bottom of my oven so I could add some water to increase the oven spring. The bread came out beautifully with a nice brown crust and a beautiful soft crumb and texture. My house smelled amazing while the bread was baking. The next time I bake this bread I’ll used 3/4 c of cranberries. Thanks so much for such a great recipe. My husband is tickled pink and now he can have his favorite bread all year long!

I made this in my breadmaker last night, so that we could use it for french toast this morning. Oh, wow, is this bread tasty! So soft, the perfect amount of orange flavor to compliment the craisins. I am looking forward to just toasting some up in the morning for breakfast. I will definitely make this again and again!

Made this lovely bread. It’s a perfect soft bread, not a sweet bread, and the orange and cranberry tang comes out nicely. It would be great as a sandwich bread for turkey and fixin’s. We ate as toast with our coffee. I used the bread machine with “dough” cycle and baked at 350 degrees F, about 30-35 minutes…I did lose track of time but when I began smelling the wonderful aromas of orange and cranberry, I had a wonderful fresh bread with a nice medium brown crust. MMMMM!

I just added fresh cranberries vs dried cranberries. Didn’t realize until read comments…. makes sense now. I would add “dried” to the ingredients for all us novice bread makers! Maybe it will still come out? We will see…. dang.

We love cranberries in any cooking shape or form and will definitely try this recipe. Your photos are so appetizing!
