Description

Easy and gorgeous bread with virgin olive oil on top.

Ingredients

  • 3 whole Eggs
  • 6 tablespoons, 2 teaspoons, 4-⅝ pinches Extra Virgin Olive Oil
  • ½ pounds, ⅞ ounces, weight All-purpose Flour
  • 1 dash Salt And Black Pepper
  • 1-⅞ ounces, weight Black Olives, Pitted And Halved
  • 3-⅝ ounces, weight Grated Mozzarella Cheese
  • 3 slices Serrano Ham Or Prosciutto (thin, Deli Slices), Diced
  • 1 Tablespoon Extra Virgin Olive Oil For Drizzling

Preparation

Preheat the oven to 200ºC. Grease a standard size loaf tin and line the pan with parchment paper so that the paper hangs over the long sides of the pan.

In a small bowl bowl, whisk the eggs and 100 ml of olive oil. Set aside.

Combine the flour with the rest of the ingredients in a large bowl (don’t include the final olive oil amount—this is for drizzling on top of the loaf). Make a well in the center of the flour mixture, then tip in the egg mixture. Mix quickly but thoroughly to form a thick batter.

Spoon batter into the tin and smooth the top with a large metal spoon. Drizzle the olive oil over the top. Bake the loaf for 30 minutes or until a skewer inserted in the middle comes out clean. Remove from oven. Turn it out of the pan onto a cake cooling rack. The outside is not very attractive but the inside is great!.

If you want, you can serve this loaf with some tomato sauce and some additional virgin olive oil.
