These are so tasty! And chock full of little goodies. I used all spelt for the flour part and kefir in place of the buttermilk. Of course, I had to add vanilla…because what is a muffin without vanilla?!
We don’t care for the strong taste of molasses, so I subbed honey and it worked out great!

These are wonderful – hearty, filling, and just the right amount of sweetness. Perfect for breakfast or a snack. I didn’t have applesauce so I subbed oil and didn’t have walnuts so I left them out. They were still great – I just ate two right out of the oven.
