Description

Great base mix to add in whatever your heart desires. My favorite is bananas, chocolate chips and coconut!

Ingredients

  • 1-½ cup Flour
  • ⅓ cups Sugar
  • 1-½ teaspoon Baking Powder
  • ¼ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • ½ teaspoons Nutmeg Or Cinnamon, Depending On Muffin Variety
  • ½ cups Butter Or Coconut Oil, Melted
  • 2  Eggs
  • 1 cup Sour Cream
  • 1 teaspoon Vanilla
  • 1 cup To 2 Cups Your Chosen Add-ins (See Suggestions In Recipe)

Preparation

Preheat oven to 400ºF and line muffin tins with papers.

Sift dry ingredients into bowl. (I usually add 1 teaspoon cinnamon or 1/2 teaspoon nutmeg depending on which variety I’m making).

Melt butter and mix with eggs, sour cream, vanilla and any additional ingredients.

Mix wet ingredients with dry. This mix will be quite thick. Divide evenly between 12 muffin cups. Bake about 20 minutes, until golden and tester comes out clean.

Flavor this basic mix using the following add-in suggestions:

mashed banana and 3/4 cup chocolate chips
1 can (10 oz. size) drained mandarin oranges (this is our favorite)
1 cup slivered almonds and 3/4 cup dried cranberries
1 cup crushed (drained) pineapple and 1 cup coconut
1 cup chopped dried apricots and 1 tablespoon poppy seeds
