You might be surprised at the flavorful ingredient in these scones – flavored coffee creamer! With all the great flavors out there, your possibilities are endless!
Preheat oven to 400 degrees. I prefer to use stoneware when baking these. If you use a regular cookie sheet, lightly butter the pan.
In a large bowl, combine the flour, brown sugar, baking powder, baking soda and salt. Cut the butter into small pieces and mix into the flour mixture. Integrate it by using a pastry blender.
In a small bowl, mix the creamer, egg and vanilla. Pour into the flour mixture and combine well. This is a very sticky dough. Stir in the chocolate chips.
Spread the dough on a lightly greased dinner plate (if you use a foam plate, there’s no need to grease) and pat into the recessed circle area of the plate. Cut into eight triangles and place 2 inches apart on baking sheet.
Bake for about 18 minutes, or until tops are lightly browned. Transfer to a cooling rack . Serve warm or at room temp.

These turned out really good for me. They are lighter than other scones I’ve made. I made them with french vanilla creamer and chocolate chips. Looking forward to trying lots of other combinations!

I made these this morning. They were very good! I used chocolate truffle creamer, and I split the dough in half and mixed in chocolate chips in one and craisin/raisin mix in the other. Both were good. These turn out with a nice crisp on the outside and soft and rich on the inside. Will try next with some pumpkin spice creamer and apple pieces, maybe some cinnamon chips. Thanks!
