Description

A light and fluffy green muffin with the flavor of mint and sweet chunks of chocolate chips.

Ingredients

  • 4 Tablespoons Butter, Melted
  • ¼ cups Sugar
  • 1 whole Egg Or Sub 1/4 Cup Egg Substitute For The Whole Egg
  • 6 ounces, fluid Vanilla Yogurt
  • ½ teaspoons Mint Extract
  • ⅔ cups Plus 1 Tablespoon Milk, Non-Fat Or Milk Of Choice
  • 4 drops Green Food Coloring
  • 1-½ cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Salt
  • ½ cups Chocolate Chips

Preparation

Preheat oven to 375 F. Line your standard size muffin tins with paper liners and lightly spray liners with cooking spray. Recipe makes roughly 14 muffins so you’ll need two 12-count pans.

In a bowl, add butter, sugar and egg; mix until well combined. Add yogurt and mint extract; mix until combined. Stir in the milk and green food coloring.

Add the flour, baking soda, baking powder and salt to the batter and mix until just combined. Do not over mix! Fold in chocolate chips

Evenly fill muffin tins with batter. Bake in the heated oven for 13-15 minutes or until a toothpick inserted in the center of the muffins comes out clean. Remove from oven. Let muffins cool for 10 minutes in the pan then place them onto a cooling rack.
