Description

Mini zucchini banana bread loaves made with whole grains. You’re going to love that your loved ones won’t know that, as well as the fact that they’re low fat, too.

Ingredients

  • 1 cup Whole Wheat Pastry Flour
  • 1 cup Oat Flour
  • ¾ cups Splenda Or Sugar
  • 1-½ teaspoon Baking Soda
  • ½ teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1 teaspoon Cinnamon
  • 1 whole Large Egg
  • ½ cups Plain Yogurt
  • ¼ cups Canola Oil
  • 1 cup Very Ripe Mashed Banana
  • 1 cup Shredded Zucchini
  • ½ teaspoons Vanilla
  • ½ teaspoons Banana Extract
  • ½ cups Mini Chocolate Chips

Preparation

Preheat oven to 325 degrees. Spray three mini-loaf pans (5 3/4″ x 3″ x 2″) with cooking spray.

Whisk together the first seven (dry) ingredients in a large mixing bowl.

Whisk together the next seven (wet) ingredients in another bowl.

Add the wet ingredients to the dry ingredients, stirring just enough to incorporate all ingredients. Do not over mix.

Stir in the chocolate chips.

Distribute batter between loaf pans. Bake in preheated oven for 40 to 45 minutes, until toothpick inserted in center comes out clean.

Cool on a rack for 10 minutes before removing loaves from pans to cool completely on a rack.

Finally someone who thinks like I do! I added zucchini to the banana bread I made the other day and it was awesome….however my husband wanted to know where I got the idea?? Why can’t I just add two good things together and make it twice as good?? lol

This was a huge hit with my kids who normally don’t care for banana bread. I was out of cinnamon so I added ginger & cloves.

Yum! I didn’t have pastry flour. As a subsitute for 1 cup whole wheat pastry flour, I used 1/2 cup less 1 tablespoon all-purpose flour + 1 tablespoon cornstarch + 1/2 cup whole wheat flour.

Came out great!

Easy to make and tastes fabulous. I didn’t have and choc chips so I substituted chopped nuts. Still great!

Even though my husband and I both don’t like zucchini (my Mom brought us a big one from her garden), this was great bread. I did a very fine shred on the zucchini, and I didn’t add the chocolate chips (figured we didn’t need the calories), and the bread turned out great. I didn’t have oat flour but I found a conversion online so I made the oat flour from 1 1/4 cups of whole oats. This is a great recipe. I might even go out and BUY a zucchini in the future, just to make this recipe (again, we normally don’t allow squash-based products in our house – haha). Thanks for the recipe!
