Description

I’m always looking for a fun way to use my mini-muffin tins. These muffins are a great snack and are perfect for little fingers!

Ingredients

  • 1-½ cup All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 3 whole Ripe Bananas, Mashed
  • ¾ cups Sugar
  • 1 whole Egg
  • ⅓ cups Butter, Melted
  • ½ teaspoons Cinnamon
  • ½ teaspoons Vanilla

Preparation

1. Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda and salt. Set aside.

2. In a large bowl, combine bananas, sugar, egg, melted butter, cinnamon, and vanilla. Add the flour mixture, and beat until smooth. (I just use a whisk and that leaves banana chunks. If you want them smoother, use a mixer). Scoop into muffin pans.

3. Bake in the preheated oven. Bake mini muffins for 13 to 15 minutes (or if you want, bake large muffins for 25 to 30 minutes). Muffins will spring back when lightly tapped and be slightly browned on top.

Yields 36 mini-muffins or 12 regular muffins.

Wow. We ran out of cereal this morning and so I actually had to make breakfast. (First world problem I know). I had some old bananas and wanted something easy. This was SO easy and probably the best muffin I’ve ever made. I used a whole tsp of cinnamon though, spices don’t scare us and I thought it was perfect. We also made the regular muffin sized ones and 23 minutes was perfect. If I had waited until 30, they would have been tough. Thanks for a great recipe! This was pregnant lady, and preschooler approved.
