Description

Some yummy, quick, moist muffins that are easy to whip up for a quick breakfast. My family’s favorite!

Ingredients

  • ½ cups Butter, At Room Temperature
  • 1-¼ cup Sugar
  • 2 whole Eggs
  • ⅓ cups Sour Cream (low Fat)
  • 1 teaspoon Baking Soda
  • 1 cup Mashed Bananas (2-3 Very Ripe)
  • 1-½ cup Flour, Sifted
  • 1 pinch Salt
  • 1 teaspoon Vanilla
  • 1 teaspoon Cinnamon
  • ½ cups Brown Sugar (topping)

Preparation

Cream butter and sugar. Add eggs. Beat until light and fluffy. Add sour cream and baking soda. Stir in bananas. Add flour and a dash of salt. Beat until smooth. Add vanilla and cinnamon. Fill muffin cups then sprinkle with brown sugar. Bake at 350ºF for 15 minutes.

Thanks for the recipe! We (my kids and I) loved them! Mine took a lot longer to bake than 15 minutes though. It was probably more like 20-25. I use a stone muffin pan though, so that probably had something to do with it.

Way too sweet for our taste even after reducing the sugar and leaving the brown sugar off the top. Definitely sweet and moist and yes my kids like them, but these are not for a nutritious breakfast because they are loaded with fat and sugar.

Wow, these were great! I reduced the sugar a little bit to 1 c, and I had buttermilk on hand and used that successfully in place of sour cream. I made 12 muffins and they were really full and took about 25 minutes to bake – but I like the size of them and the fact that I only had to wash one muffin tin, so will probably do that again. :o) Thanks for a delicious recipe!!!
