A traditional slightly sweet scone recipe with an Irish twist!
Preheat oven to 475 degrees F.
Sift the flour, salt, sugar, and baking powder together. Mix the butter pieces into the dry ingredients and quickly mix with your fingers or a biscuit cutter. Add the currants or raisins and stir with a fork. Mix eggs and milk in a separate bowl. Make a well in the middle of the dry ingredients and add the eggs and milk. Working with 1/4 of the dough at a time, shape into a ball and pat out to about 1-inch thickness, onto a lightly-floured board.
At this point, you can either use a cookie cutter (like a 3-leaf clover), a biscuit cutter, or you can cut the dough into triangles.
Bake for 12-13 minutes or until a very light brown. These are especially tasty when drizzled with frosting made of powdered sugar and milk.
