Moist and tender 100% whole wheat bread that is egg- and dairy-free as well!
Bread machine version: Put the water into the pan in your bread machine. Measure the oil first and then the honey (this makes the honey slip out of the measuring cup) and add each into the water. Add salt and gluten, then add the flour. Make a small well in the center of the flour and put yeast into that well. Set to manufacture’s instructions for wheat bread and let it go.
Oven version: Combine water, oil, honey, and salt in a mixing bowl. Add gluten and half of the flour and mix thoroughly. Add yeast and enough flour to make a soft dough. Knead until smooth (about 5 minutes). Let dough rise until doubled. Shape as desired (into two 1-pound loaves), put each in a loaf pan and let the loaves rise until doubled again. Bake at 350 F for 25-30 minutes.
