Description

These muffins are light and fluffy and they are great for breakfast or an afternoon snack with a cup of tea. Try my simple recipe.

Ingredients

  • 3-⅝ ounces, weight Cake Flour
  • 1-¼ teaspoon Baking Powder
  • 1 ounces, weight Butter
  • 1-⅞ ounces, weight Sugar
  • 1 whole Egg
  • 1 teaspoon Vanilla
  • 1 tablespoon, 2 teaspoons, 1-¼ pinches Milk
  • 1 whole Large Ripe Banana -mashed Well

Preparation

Sift together the flour and baking powder. Next cream butter and sugar with an electric hand mixer until light and fluffy. Add egg, vanilla and milk. Mix well with a spoon.

Stir the flour mixture into the creamed mixture. Mix with a wooden spoon. Add banana. Mix to combine but don’t over mix.

Now line a muffin tin with paper cups (recipe should make 9 muffins). Pour batter into cups. Fill only 1/2 to 2/3 full.

Bake at 180C degrees for about 20 minutes. Muffins are ready when the top springs back when you touch it with your finger.

Serve and enjoy.

Yum! Bananas are about $13 a kilo here (in Melbourne) at the moment, so I think I’ll wait until there is a greater supply of bananas until I make this! (Floods and cyclone wiped out the Queensland banana crops).
