Description

Fresh strawberries are baked into a thick delicious quick bread batter with cream cheese and buttermilk.

Ingredients

  • ½ cups Unsalted Butter, Softened
  • 1 cup Sugar
  • 4 ounces, weight Cream Cheese, Softened
  • 2 whole Eggs
  • 1 teaspoon Pure Vanilla Extract
  • 2 cups All-purpose Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Kosher Salt
  • ½ cups Buttermilk
  • 1-½ cup Strawberries, Rinsed, Dried And Chopped

Preparation

1. Grease and flour a 9×5 inch loaf pan.
2. With an electric mixer, cream butter, sugar and cream cheese until fluffy. Add eggs one at a time. Mix in vanilla.
3. In a separate bowl, mix flour, baking powder, baking soda and salt. Blend flour mixture with butter mixture just until blended. Add buttermilk and only stir until just combined; do not over mix.
4. Carefully fold in strawberries. Dough mixture will be thick.
5. Bake in a 350-degree oven for 50 to 60 minutes.

Yum! Getting fresh Oregon strawberries and some Philadelphia cream cheese at the store tomorrow!!! Can’t wait to try this recipe!

This sounds fabulous! I am going to try it with whole wheat pastry flour, 1/2 cup splenda, and 1/2 cup fructose along with the remaining ingredients.

I absolutely loved this recipe! It was super easy to make, full of fresh strawberry flavor, and very velvety! To add a little extra lovin’ to it, I combined 1/2 cup of softened butter, 1/4 cup strawberry jam, and 1 teaspoon of honey and spread it on individual slices of bread. Yum!

Loved this recipe! I did substitue the sugar with 1/2 cup splenda and 1/2 cup fructose. I also substituted whole wheat pastry flour. It turned out moist and tasty. I may bake it in smaller pans as the top and sides got over done trying to get the middle done in a 9×5 loaf pan.
