Description

Light, fluffy scones that taste like you are eating your morning mocha.

Ingredients

  • 2 cups All-purpose Flour
  • ¼ cups Sugar
  • 1 Tablespoon Baking Powder
  • ½ teaspoons Salt
  • ½ cups Heavy Cream
  • 5 teaspoons Instant Coffee Granules
  • 6 Tablespoons Butter, Cut Into Cubes
  • 2 whole Eggs
  • 1-½ cup Chocolate Chips

Preparation

Preheat oven to 400ºF. Line a baking sheet with parchment.

Combine flour, sugar, baking powder and salt in a mixing bowl.

Combine cream and instant coffee in small bowl. Stir to combine. Cut in cubes of butter until mixture resembles pea gravel. Break eggs into the bowl of cream and stir. Pour cream mixture into a well that you’ve made in the middle of the flour mixture and stir with a fork until combined. Add chocolate chips.

Turn out onto a floured surface. Work dough together just until combined. Pat into a circle 3/4 inch thick. Cut into 8 wedges (like a pizza). Spread out wedges on the prepared baking sheet. Brush with cream and top with turbinado sugar.

Bake 18–20 minutes. Let cool (or not). Enjoy.

Oh, also good to do: use a large ice cream scoop (about 1/4 cup?) to drop it onto the cookie sheet; this makes a nice portion that still satisfies.

These were delicious! I used milk instead of cream, which worked fine. I did notice that the dough was fairly wet, so instead of patting it out and cutting it into wedges, I dropped by spoonful onto cookie sheet. Worked great! I would absolutely recommend these. If you are looking for a stronger coffee flavour, you could easily add more coffee, as the coffee flavour is nice, but not overly strong.

Super easy and simple to adjust to customize your extras. We’ve used up to 2 cups of ingredients, of which my favorite is chocolate chips and craisins (no espresso). If you want a stronger coffee flavor, you can also up the instant coffee to 2 tablespoons. Not a single person has tried our variations on this and disliked it; in fact, our priest had one and asked all day, “When are you giving me more of those scones?”
