A super easy recipe for a moist and delicious banana bread. Naturally sweetened applesauce replaces the oil and butter that is traditionally called for in banana bread. Enjoy!
1. Preheat oven to 350°. Spray a loaf pan with cooking spray.
2. Mash bananas with a potato masher or a fork, set aside (I like to keep it on the chunky side because I like little bits of banana floating in my bread).
3. Combine flour, sugar, baking soda in a medium bowl.
4. Add cinnamon applesauce, eggs, vanilla and bananas (and nuts if using) to flour mixture and mix with a rubber spatula or wooden spoon until well combined. Do not over-mix.
5. Pour batter into a greased loaf pan and bake on the center oven rack for 50 – 60 minutes (until inserted toothpick comes out clean).
6.Let cool in pan for 5 minutes and then cool bread on a cooling rack.

I have this recipe in the oven right now! I’ll leave a review once I pull it out and sample a bite (or three).
I split the 2 cups flour into 1 cup all-purpose flour, 1/2 cup whole wheat flour, and 1/2 cup oats. I ran out of white sugar (all that holiday baking!) using 1/2 cup white sugar, 1/2 cup brown sugar. I also added a tablespoon of whole flaxseed.
