I got this recipe from my husband’s grandma’s sister. She’s been making them for years. I tweaked it a bit for our tastes, and now they’re our favorite go-to dinner bread. Mayo is used instead of butter or oil, and there’s also the addition of baking powder. Don’t let the oddness of the ingredient list scare you! They’re worth it!
Mix together dry ingredients. I know that normally you don’t use baking powder with self rising flour, nor with buttermilk. Usually you’d see baking soda. Trust the recipe! Baking powder is correct!
Add mayo and milk and mix until combined. You want the batter to be about the same as cupcake batter, not thick like regular biscuit dough. You may need to add more milk, it really depends on your flour and the humidity where you are.
Drop by spoonfuls into a greased muffin tin. Divide batter evenly between the 12 cups of the tin.
Bake for approximately 20-25 minutes at 350 degrees F until golden brown.
