Super easy cinnamon rolls. You don’t even need a mixer. They freeze well and make great treats for lunch bags.
Mix dry ingredients (flour, salt, baking powder, sugar) together in a large bowl. In a separate bowl, combine beaten eggs, milk and melted butter; add to dry ingredients and mix well (by hand).
Place on a lightly floured surface and knead lightly. Roll out into a rectangle approximately 8″ by 24″. Mix remaining ingredients and spread over dough. Roll up dough like a jelly roll and slice 2″ thick. Cinnamon rolls can be placed in an oblong pan, or I like to put them in paper muffin cups and bake them individually in muffin tins. It makes for easy clean up and easy portioning.

Trying the recipe now–it looks great! I noticed there is no temp for baking.. I’ll be winging that one! (Shooting for 20-25 min. at 375 f. ) Overall, I liked how quickly this recipe is coming together, so I’m sure I’ll be using it for a quick cinnamon roll fix!
