These muffins are so easy to make and disappear in no time. Fresh or frozen blueberries (strawberries are also wonderful in this recipe) can be used, but fresh are the best!
Preheat oven to 400 degrees. Grease muffin tins.
Mix dry ingredients. In a separate bowl, mix egg, milk, and oil.
Add the wet ingredients all at once to the dry mixture. Mix only until flour is moistened.
Fold in the blueberries.
Spoon two heaping tablespoons into each muffin tin.
Bake for 20 – 25 minutes.
Makes about 10 muffins.
