Description

This Easy Banana Bread is moist, scrumptious and super quick to prep and get in the oven. It is by far our favorite banana bread and is loved by friends, family and co-workers. You too will be adding this to your sweet bread recipe rotation. After all, who doesn’t need a fabulous recipe to use up all those over-ripe bananas?

Ingredients

  • 1-½ cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • ¾ cups Sugar
  • 1 teaspoon Salt
  • 4  Over-ripe Bananas, Mashed
  • 2  Eggs, Room Temperature
  • 1 teaspoon Vanilla
  • ½ cups Safflower Oil
  • ¾ cups Greek Yogurt

Preparation

Preheat oven to 350ºF. Grease a 9×5 inch baking dish well.

In a large bowl, whisk together flour, baking soda, sugar and salt.

In a medium bowl, mix mashed bananas, eggs, vanilla, oil and Greek yogurt. Add wet mixture to dry mixture and stir just until combined.

Pour into the prepared loaf pan. Bake in the center of the oven for 45 minutes or until a toothpick inserted in the center of the loaf comes out clean.

Cool for 15 minutes before inverting. Place on a wire rack to cool. Cool completely before slicing.
