Crispy Thin Oatmeal Cookies, with or without chocolate.
Preheat oven to 400ºF. Line a baking sheet with parchment paper.
Melt butter. Add oats and let sit and soak for about 15 minutes.
Mix egg, sugar and vanilla until white, light and fluffy. Add flour and baking powder.
Portion out dough onto prepared baking sheet by the teaspoonful, leaving plenty of space in between. No more than 8-9 cookies per sheet! It won’t look like much, but just wait and see!
Bake for 8–10 minutes. Cool down completely and store in an airtight container, or dip in melted chocolate and then store in an airtight container.
Enjoy—again, and again, and again.
