Description

Delicious and simple, and makes a fantastic post-Thanksgiving French toast!

Ingredients

  • 2 cups All-purpose Flour
  • 1-½ teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1 whole Orange, Zested
  • ½ cups Walnuts, Roughly Chopped
  • 2 cups Fresh Cranberries
  • 4 ounces, weight Butter, Melted
  • ¾ cups Granulated Sugar
  • 1 whole Egg

Preparation

Preheat oven to 350F.

Mix together the flour, baking powder, baking soda, salt, orange zest, walnuts and cranberries in a large bowl.

In a smaller bowl, whisk together the melted butter, granulated sugar and egg. Pour wet ingredients in with the dry ingredients and mix to combine.

Note that the dough will be on the dry side and almost resemble sugar cookie dough.

Press the dough into a greased loaf pan and bake for about an hour to an hour and fifteen minutes. The top of the loaf will be a rich golden brown.

Let cool before slicing.

**This bread freezes very well! Just bake, freeze and defrost when ready to eat.

I made this with 2 tbsp of butter and orange juice. It was pretty good but the dough taste somewhat bland to me – it was just sweet. Cranberries are definitely the best part in this bread. I’m considering this to be a good base recipe and will be experimenting with additional ingredients to make it more interesting.

This bread makes me think of Christmas and my grandma. My Grandma Rose (who passed away a couple years ago), always made this at Christmastime, and it’s sooo good.

Made this and whole house smelled YUMMY!!!
Only change I made was after grating the orange, I squeezed all the juice into the batter. Great taste

I’ve made this twice and love it! It’s so quick and delicious! My oven cooks a little high so I had to reduce the baking time to 45-50 minutes. Thanks for posting the recipe!

OK – I have been dying to try this recipe, and I could not wait any longer. So, I subbed blueberries for the cranberries, and let me say this recipe is FAB-U-LOUS!! I can’t wait to make it again with cranberries and may give it as a Christmas gift this year. It is so awesome and so easy! A definite keeper!
