These couldn’t be easier to make! They are satisfyingly tart, but sweet enough to tempt even the most discerning of bakers.
1. Combine wet ingredients in a bowl. Add dry ingredients, and fold in. (I know more “seasoned” bakers will separate/mix dry from wet but I never do—too many steps for me.) Place just over 1/4 of cup of batter into greased muffin cups.
2. Bake in a 350ºF oven for 20 minutes, or until slightly browned on the top. Enjoy!
