Just a plain cornbread that turns out nice and moist as long as you don’t over-beat or over-bake it.
Preheat oven to 400 F. Stir together the dry ingredients in a bowl. In another bowl, whisk together the egg, milk, and oil. Add the wet ingredients into the dry ingredients and mix, but do not overbeat.
Spread into a greased 9×13 baking pan. Bake for 20-25 minutes.
