Not sure what to do with that corn you’ve frozen? How about a can of corn you might have, or some fresh corn you’d like to cook with? These corn fritters are just the thing.
Drain thawed corn and put in a medium mixing bowl. Stir in eggs and milk. Combine flour, baking powder, sugar and salt in a small bowl; stir in corn mixture, and mix gently.
Heat vegetable oil in a skillet or electric griddle over medium-high heat. Drop batter by ¼ cupfuls and cook until delicately browned, turning to brown the other side. Serve with butter and maple syrup.

My dad used to make these with canned cream style corn. Brings back memories!!
