Description

A taste of the tropics!

Ingredients

  • 2 cups Flour
  • ¾ teaspoons Baking Soda
  • ½ teaspoons Salt
  • ½ cups Flaked Sweetened Coconut
  • ¾ cups Sugar
  • ¼ cups Butter, Softened
  • 2 whole Eggs
  • 3 whole Ripe Bananas, Mashed
  • ¼ cups Plain Yogurt Or Sour Cream
  • 3 Tablespoons Rum, Or 1 Tsp. Rum Extract
  • ½ teaspoons Vanilla Extract
  • ½ cups Powdered Sugar
  • ½ whole Lime, Just The Juice

Preparation

Preheat oven to 350 degrees F. Grease a 9 X 5-inch loaf pan.

In a bowl, whisk together the flour, baking soda, salt, and coconut. In a medium bowl, beat the sugar and butter for 1 minute. Add the eggs and beat for 1 minute. Add the bananas, yogurt, rum, and vanilla; mix until well blended.
Add the flour mixture to the creamed mixture and beat on low speed until just combined.

Pour the batter into the pan and bake for 60 minutes or until a tester comes out clean. Cool for 10 minutes in the pan, then turn out onto a rack.

Meanwhile, mix the lime juice and powdered sugar. Use a toothpick to prick the top of the bread, then drizzle the glaze over top.

I just tried a slice of this still warm from the oven and it is amazing! Super moist and not too sweet, I think this will be a new favorite. I used Cruzan citrus rum instead of plain, I am sure a variety of flavors would work well.
