Description

Nah, you can’t tell green tomatoes are in these loaves of delicious bread.

Ingredients

  • 2 cups Green Tomatoes, Diced
  • 1 whole Green Apple, Peeled, Cored, Diced (I Use Granny Smith)
  • 3-¼ cups All-purpose Flour
  • 1 teaspoon Iodized Table Salt
  • 1-½ teaspoon Baking Soda
  • 2 whole Large Eggs
  • ½ cups Vegetable Oil
  • 1 cup Granulated Sugar
  • ½ cups Light Brown Sugar
  • 1 Tablespoon Cinnamon
  • 1 teaspoon Pure Vanilla Extract
  • 1 teaspoon Pure Almond Extract
  • 2 pinches Nutmeg

Preparation

Preheat oven to 350ºF. You’ll need two 5 x 9 loaf pans sprayed with Baker’s Joy. Set aside.

In a food processor (or a blender), add diced green tomatoes and diced green apple. Pulse several times and puree several minutes on high.

Using a stand mixer with paddle attachment (or hand mixer), add flour, salt, and baking soda. Whisk to combine. Add eggs, vegetable oil, both sugars, and mix for 2 minutes. Add cinnamon, both extracts, and nutmeg. Run mixer several minutes. Transfer pureed tomato/apple mixture into batter and mix on low 2–3 minutes to incorporate. (It may seem heavy or dry, but I assure you, once baking, the tomatoes add moisture.)

Divide batter evenly between loaf pans. Bake 50–55 minutes. Insert a toothpick after 55 minutes; it should come out clean.

Allow to rest. Serve with good butter and enjoy this wonderful bread. We absolutely love it!
