Moist and sweet these healthy muffins will keep your hunger at bay.
Heat the oven to 350 degrees.
Mix together flour, flax seed meal, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl.
Shred carrots and apples in a food processor. Stir into the dry ingredients the carrots, apples, and coconut. Combine the egg, vanilla and milk and then mix throughly into the rest of the batter. Pour into lightly greased muffin tins. Bake for 15 – 20 minutes.
