Description

These classic chocolate chip muffins may not have the giant muffin top but everything else about them is spot on. Serve them for brunch with friends or devour them on your own!

Ingredients

  • 2 cups All-purpose Flour
  • ⅓ cups Granulated Sugar
  • ⅓ cups Light Brown Sugar
  • 2 teaspoons Baking Powder
  • ½ teaspoons Salt
  • ½ cups Butter, Melted And Cooled
  • 2 whole Large Eggs, Lightly Beaten
  • ⅔ cups Buttermilk
  • 2 teaspoons Vanilla Extract
  • 1-½ cup Chocolate Chips

Preparation

1. Preheat the oven to 375F. Line a muffin tin with 12 paper liners. Set tin aside.

2. In a large bowl whisk together flour, white and brown sugar, baking powder, and salt.

3. In a smaller bowl stir together the melted butter, eggs, buttermilk, and vanilla extract until well blended. Create a well in the center of the dry ingredients. Pour the liquid mixture into the well and gently stir until combined. Stir in chocolate chips.

4. Spoon batter into muffins cups and bake for 18-20 minutes or until a toothpick comes out clean (a little chocolate is OK here). Remove muffins from the oven and allow to cool before serving. Makes 12 muffins.

Yum! I doubled this recipe and put chocolate chips in one batch and fresh blueberries in the other batch.. Both were delicious! The muffin “cake” was moist and yummy!

I was in a baking mood yesterday and came across this recipe and decided that I would make it since I had all the ingredients in the house. OMG let me tell you that they were wonderful. I’m usually making light and more diet friendly desserts but when I had one muffin it was so thick and heavy and wonderful. I used 1 1/2 cups of mini chips and I think I could have used 1 cup instead. Even my 1 year old enjoyed the muffins.
