These are a healthy, fibre-filled muffin that taste delicious and have the unique addition of avocado.
1. In a large bowl, whisk together flax seed and water until it is jellied. Add avocado and mash with a masher. Blend in margarine, vanilla and brown sugar. Add all other ingredients to the mix, stirring until incorporated.
2. Fill 10-12 muffin cups, 3/4 high. Bake in a 350F oven for 15 minutes. Enjoy!
Note: For the oat flour, add 1 1/2 cups of oats to a blender and blend until fine.
