Description

I canned 7 quarts of cherry pie filling and used the leftover to make this recipe. Wonderful! And, of course, store bought can be used. I’m trying apple pie filling bread next!

Ingredients

  • 1-½ cup Oil
  • 3 whole Eggs
  • 1 teaspoon Vanilla Extract
  • 3 cups Flour
  • 2 cups Sugar
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 20 ounces, weight Canned Cherry Pie Filling
  • 1-½ cup Chopped Pecans (optional)

Preparation

Beat together oil, eggs and vanilla.

Sift dry ingredients together and add to egg mixture.

Stir in cherry pie filling and nuts by hand.

Pour into 2 greased and floured loaf pans.

Bake at 350° for 50 minutes to 1 hour.

I made this last night for work today and all are gone already. Rather than making a loaf of bread I put them in muffin papers and baked them for about 25 minutes. Thanks for the recipe.

This was moist and overall good. I was kind of hoping for a more cherry pie taste. It was rather bland so maybe I will add more cinnamon. I also had to add a little more oil and another egg because I could hardly mix it. I wonder if I could add more cherry pie filling? Or I’ll just stick to cherry pie – LOL. But my husband loved it.
