Description

Light and fluffy cheese muffins that go with everything or just by themselves. Recipe is exactly like Jim & Nicks BBQ in Birmingham, Alabama.
Better double the recipe!

Ingredients

  • 2 cups Sugar
  • 3 cups All-purpose Flour
  • 2 cups Shredded Cheddar Cheese
  • 2 whole Eggs, Well Beaten
  • 1 stick Butter, Softened
  • 3 teaspoons Baking Powder
  • ½ teaspoons Vanilla
  • 1-½ cup Milk (2% Works Best)

Preparation

Mix all ingredients together in a medium-sized bowl. Pour into a generously greased muffin pan and bake at 400 degrees for 15 – 20 minutes.

I agree with sdjenn, the batter was too dry to come together, definitely NOT pourable. I added a little milk until it was easy to scoop into the muffin tins and then I baked them up. They are VERY close to Jim and Nick’s but I think I need to use sharp cheddar next time and maybe just a hint of cornbread? Still, a fabulous start, we loved them!

I made these today, halving the recipe since we already made blueberry muffins. The batter was super dry and hard to stir so I threw in just under a 1/2 cup plain yogurt and also sprinkled some cheese on top. My son loves them — a little sweet for me, I keep thinking there should be some corn in there.
