Description

This is my version of a tender, flaky biscuit made in a food processor. They are great with butter and honey or as a base for sausage gravy.

Ingredients

  • 2 cups All-purpose Flour
  • ½ teaspoons Baking Soda
  • 2-½ teaspoons Baking Powder
  • ½ teaspoons Salt
  • 2 teaspoons Sugar
  • ⅓ cups Shortening
  • ¾ cups Buttermilk

Preparation

Preheat oven to 450 degrees.

Put dry ingredients into food processor bowl, pulse to combine. Add shortening, pulse 3-4 times until mixture resembles course crumbs. Add buttermilk, pulse just until dough combines.

Put on lightly floured board, knead 3-4 times just until smooth. Pat out 3/4 inch thick, cut with 2 1/2 inch cutter.

Gently push together scraps, cut remainder of biscuits. Transfer biscuits to baking sheet, bake for 10-12 minutes or until golden. Makes 8 biscuits.

I used whole milk + vinegar instead of buttermilk, and that seems to have turned out fine. Overall this is a tasty biscuit, but I had a terrible time with the dough in this recipe! It was so sticky I couldn’t knead it or cut it, so I ended up treating these as drop biscuits. I’m guessing that maybe I mixed the dough too much in the food processor.

Great quick recipe! I didn’t have buttermilk so I used regular milk and vinegar and it worked perfectly! Almost as good as the ones I remember my mom making when I was a kid!
