Description

These mouth-watering, bursting-with-berries muffins are perfect for breakfast with a cup of coffee. Add a little icing on top and you have yourself a delicious dessert!

Ingredients

  • 2-½ cups Flour
  • 1-½ teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 4 Tablespoons Unsalted Butter, Softened
  • ¾ cups Sugar
  • 2  Large Eggs
  • 2 teaspoons Vanilla Extract
  • 1 cup Sour Cream Or Plain Greek Yogurt
  • 1 cup Fresh Or Frozen Blueberries
  • ½ cups Fresh Or Frozen Blackberries
  • ¼ cups Confectioners Sugar
  • 1 Tablespoon Water

Preparation

1. Preheat oven to 375 F. Line 12 paper cups in a standard sized cupcake/muffin pan.
2. In a large bowl mix flour, baking powder, baking soda and salt. Set aside.
3. In another bowl mix softened butter and sugar until well mixed and fluffy. Then add one egg at a time until it is mixed well. Add the vanilla and sour cream or yogurt until well mixed.
4. Now add the dry ingredients to the mixture. Blend well. It will be firm.
5. Now add berries and gently mix.
6. Scoop batter equally into cups. Bake for 20-25 minutes or until a toothpick inserted in the center of one comes out clean. Remove pan from oven. Let muffins cool on a rack for at least 10 minutes before eating.
7. For icing: mix confectioners’ sugar and water in a small bowl until well mixed. When muffins are cool drizzle icing on top.
