Moist and sweet muffins, just like a bakery!
In large mixing bowl, cream butter with sugar until fluffy (about 3 minutes). Add eggs one at a time. Add vanilla.
In separate bowl, mix flour with baking soda, salt, baking powder and pudding mix.
Alternate adding the dry ingredients with the whole milk (in about 3 additions of each). Fold in blueberries. Fill greased muffin cups 3/4 full with batter.
Sprinkle tops with coarse sugar.
Bake muffins in a 350ºF oven for 25-30 minutes. Makes 30 regular-sized muffins. Enjoy!
