Description

These are the BEST blueberry bran muffins I’ve had (including at coffee shops)! Not only are they wholesome, they are easy to make!

Ingredients

  • 1-½ cup Wheat Bran (not Bran Flakes)
  • 1 cup Skim Milk
  • ½ cups Unsweetened Applesauce
  • 1 whole Egg
  • ½ cups Honey
  • ½ teaspoons Vanilla
  • 1 cup Whole Wheat Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1 cup Blueberries, Fresh Or Frozen

Preparation

Preheat oven to 375ºF. Spray muffin tins with oil.

Mix together bran and milk. Let stand 10 minutes.

In a large bowl, mix applesauce, egg, honey and vanilla. Sift together flour, baking soda, baking powder and salt; make a well in the center. Add the applesauce mixture to the dry ingredients, stir until combined. Add bran/milk mixture and mix until just blended. Fold in blueberries.

Scoop into muffin tins and bake for 15-20 minutes, until the tops spring back when lightly tapped.

I didn’t have applesauce so I mashed up a banana. Yum. It worked just fine. I love that these have no butter or processed sugar. Great!

Delicious! Made these this morning and the family enjoyed them. Nice and moist and I liked the addition of the blueberries to a bran muffin.

This was a good basic recipe. I made it as is except I used 1/3 cup agave nectar in place of the honey. The muffin was nice and moist even without any butter or oil in it. I will cut the salt in half next time and add some cinnamon. This would be nice with any berry or shredded apple or zucchini in it.
