Description

A healthy quick bread that is moist full of chunky bananas and blueberries that pop in your mouth!

Ingredients

  • 1 cup All-purpose Flour
  • ½ cups Whole Wheat Pastry Flour
  • ½ cups Sugar
  • 2-½ teaspoons Baking Powder
  • ½ teaspoons Salt
  • ½ teaspoons Cinnamon
  • ½ cups Old Fashion Oats
  • 1 whole Egg
  • ½ cups Unsweetened Applesauce
  • 1 cup Bananas, Mashed
  • ½ teaspoons Vanilla Extract
  • 1 cup Blueberries, Fresh Or Frozen

Preparation

Preheat oven to 350ºF.

Mix together dry ingredients until well combined.

In a separate bowl, mix eggs, applesauce, bananas, and vanilla.

Stir banana mixture into the flour mixture, and then add blueberries. Stir carefully (the blueberries crush easily).

Bake in a greased loaf pan for 1 hour or in 3 mini pans for 40 minutes. Bread is done when an inserted toothpick comes out clean. Note the banana may stick to the toothpick!

Keep refrigerated.

Makes 1 loaf or 3 mini loafs, approximately 18 slices (6 per mini loaf).
