Description

Yummy bakery looking and tasting muffins!

Ingredients

  • 3 cups All-purpose Flour
  • 1 cup Sugar
  • 4 teaspoons Baking Powder
  • ¾ teaspoons Salt
  • ¾ cups Whole Milk
  • ⅔ cups Vegetable Oil
  • 2 whole Eggs
  • 2 cups Frozen Blueberries
  • 4 teaspoons Sugar

Preparation

Combine first 4 ingredients in a large bowl, make a well in center of dry ingredients.

Stir together milk, oil and eggs in a bowl; add to dry ingredients, stirring just until dry ingredients are moistened.

Fold in the frozen blueberries.

( Batter will be quite thick) Spoon sugar over the muffins.

Bake at 400 degrees for 20-25 minutes or until tops are slightly browned and a toothpick comes out clean.

Remove from pan as soon as they come come out of oven, cool on rack for 5 minutes or so.

I didn’t love these muffins as I hoped I would. The sugar crunch tops are great and the texture of the muffin is pretty good. However, they seemed to be lacking flavor — the taste that comes through the most is the oil. If I tried these again, I think I’d add vanilla and substitute some applesauce and butter for the oil.

Wow! These were terrific, I used fresh berries instead of frozen and didn’t sprinkle with sugar and they were a total kid-pleaser. Next time I’ll try to substitute a little yogurt or applesauce for some of the oil and sugar.

On a whim I added three fourths of a cup of plain low fat yogurt, two tablespoons of honey and a cup of chocolate chips. I also used fresh blueberries. YUM! The next day I made them again, adding only the yogurt and completely forgetting to sprinkle sugar on top. Still yum, though a bit less like the muffins you spend $3.95 on at a coffee shop. The first time? Dead on for an overpriced but delicious bakery muffin. Only I made ‘em at home!
