Description

I had some bananas, an apple and a zucchini that needed to be used, and this is what I came up with! Makes your kitchen smell like fall! You can make bread loaves or muffins! I did both.

Ingredients

  • FOR THE BATTER:
  • 4 cups All-purpose Flour
  • 2 teaspoons Baking Soda
  • 2 teaspoons Baking Powder
  • ½ teaspoons Kosher Salt
  • 2 teaspoons Ground Cinnamon
  • 1 teaspoon Ground Nutmeg
  • ½ teaspoons Ground Ginger
  • ¼ teaspoons Ground Cloves
  • 4 whole Eggs
  • 1 cup White Sugar
  • 1 cup Brown Sugar
  • 1 stick (1/4 Cup) Unsalted Butter, Melted
  • 1 teaspoon Vanilla Extract
  • 1 whole Medium Sized Zucchini, Peeled And Shredded
  • 1 whole Granny Smith Apple, Cored, Peeled And Shredded
  • 2 whole Medium Sized Bananas, Mashed
  • ¾ cups Chopped Walnuts

  • FOR THE STREUSEL:
  • ¼ cups Chopped Walnuts
  • 2 Tablespoons All-purpose Flour
  • ¼ cups Brown Sugar
  • ½ teaspoons Ground Cinnamon
  • 2 Tablespoons Butter, Cold

Preparation

Preheat oven to 350 degrees. Grease two 9×5 bread loaf pans and/or line with paper cups or grease a muffin pan.

To prepare the batter, in a medium bowl, mix all the dry ingredients together. Set aside. In a stand mixer, with the paddle attachment, beat the eggs. Add the sugars, butter, and vanilla. Gradually, add in the dry ingredients. Then fold in the shredded zucchini, apple and mashed bananas.

Now, this is what I did: I filled each muffin cup 3/4 full. In a small bowl, prepare the streusel by combining the 1/4 cup chopped walnuts, flour, brown sugar and cinnamon. Cut in the cold butter until it resembles coarse crumbs. Sprinkle over muffins. Bake for 20 minutes.

I then add the 3/4 cup walnuts to the remaining batter and divide the batter between the 2 loaf pans. Bake for 45 minutes.

You can definitely make more streusel and top the bread loaves as well. Hope you enjoy it!
