A moist, fluffy, high fat side bread for almost zero net carbs! Works very well as a side with soup, stew or chili. Or cover with low carb gravy for breakfast. Could also be baked as drop biscuits or muffins. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten-free, sugar-free, low sodium, low potassium, CKD/Renal Diet friendly.
Preheat oven to 425ºF. Place 1 tablespoon of the butter in a 10-inch oven-proof skillet and place in oven for butter to melt.
In a medium mixing bowl, melt remaining butter in the microwave. Add eggs and milk substitute, whisk until well blended. Add remaining ingredients and whisk well again.
Carefully remove hot skillet from oven (do not touch skillet with your bare hands!). Tilt the pan to get the butter all over the bottom. Pour the batter into the skillet, and smooth the batter out with your spoon or spatula.
Bake 20 minutes, or until top is beginning to turn golden, and edges are browning. Use a toothpick to test the center. If it comes out clean, the bread is done.
Allow to cool for at least 15 minutes before cutting. The bread will be very moist. Leftovers may be frozen.
Notes:
• Updated 10/2/2018 to add nutritional yeast for a cheesier flavor without added calories.
• The Parmesan, butter and cheddar add enough saltiness to this recipe that no additional salt is needed.
• This bread is great to use as a high fat side dish, and would make excellent drop biscuits or muffins. Cube and dry out in the oven for croutons, and use on soups/salads, or to make low carb stuffing or bread crumbs.
