Description

Mmmuffins! To finish off my apple stash, I think I’ve perfected my apple muffin! I just love the addition of sour cream; it makes a nice rich and moist muffin, and really sets off the apple. Enjoy!

Ingredients

  • FOR THE TOPPING:
  • ½ cups Brown Sugar
  • ¼ cups Flour
  • ¼ cups Margarine
  • ½ teaspoons Cinnamon
  • _____
  • FOR THE MUFFINS:
  • 1-½ cup Flour
  • ½ cups White Sugar
  • 3 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 1 whole Egg
  • ½ cups Sour Cream
  • ¼ cups Cooking Oil
  • 2 Tablespoons Milk
  • 1 cup Apples, Peeled, Cored And Chopped

Preparation

With a fork combine topping ingredients together until crumbly.

In another bowl, mix together dry batter ingredients, then beat in the wet ingredients. Fold in apples.

Place batter in greased or lined muffin tins, sprinkle with topping. Bake at 400° for 20-25 minutes.

Makes 12 muffins.

This was good. I would add cinnamon to the muffins in addition to the topping the next time I make it.

We really enjoyed this – just a couple of my modifications in case they’re helpful for anyone else:

Instead of milk, I used non-fat yogurt, and used heaping tablespoons.

I added a cup of quick oats to the recipe and a bit of cinnamon (probably not even quite a quarter of a teaspoon) to the actual batter.

I used red apples (red delicious, just because that’s what I had on hand) however I think it would have an interesting taste with a slightly more tart apple.

I’ve added this one to my recipe box for later use.

The topping was really good but the muffin itself was a bit bitter. It has a good consistency and lightness but I would try and find something to make it sweeter.
