Description

Warm scones filled with apples, cinnamon and butter. Doesn’t get any better than that!

Ingredients

  • 2 cups All-purpose Flour
  • ¼ cups Sugar, Plus More For Sprinkling
  • 2 teaspoons Baking Powder
  • 1 teaspoon Cinnamon
  • ½ teaspoons Baking Soda
  • ½ teaspoons Kosher Salt
  • ¼ teaspoons Fresh Nutmeg, Grated
  • 1 stick Chilled, Unsalted Butter
  • 2 whole Apples, Peeled And Grated (Like Golden Delicious Or Honeycrisp Variety)
  • ¼ cups Whole Milk, Or Up To Double The Amount, As Needed

Preparation

Preheat oven to 425ºF and line a sheet pan with parchment paper.

In a large bowl, combine the flour, sugar, baking powder, cinnamon, baking soda, salt, and nutmeg. Then cube up the chilled butter and add to the flour mixture. With a pastry cutter, blend the butter and the flour together until small crumbles form. Add in the shredded apples, stir. Gradually add the whole milk, stirring until the dough forms.

On a lightly floured surface, knead the dough 8-10 times before forming into a rectangle. Cut eight wedges and place on the prepared pan. Brush with a little milk and sprinkle with sugar.

Bake in your preheated oven for 12-15 minutes or until the edges are lightly golden. Serve warm with butter.

The flavor is there, but the texture doesn’t remind me of a scone at all. Maybe I did something wrong? Mine came out more like apple cinnamon muffins in the shape of a scone. It doesn’t say to try and get any of the moisture out of the apple shreds, but I feel like I should have. I may try it again and see if that makes a difference.
