I have been cooking up a lot of recipes this month using apple cider. This was an easy recipe and it makes 2 loaves so you can eat one now and freeze one for later—or not!
Preheat oven to 375ºF. Spray and flour 2 loaf pans or 18 muffin cups.
Cream butter and sugar with a mixer. Add the eggs and cream thoroughly. Combine the flour, baking powder, salt and cinnamon. Add this to the egg mixture. Mix.
Add the apple cider 1 cup at a time. Combine. Stir in the chopped apples.
Divide the batter between the loaf pans. Bake 50-70 minutes until a toothpick comes out clean. If you are making the muffins, they will need to bake 30-35 minutes.
