This cake is so delicious and can be eaten for breakfast, as a snack or as a dessert! It is very moist and keeps well for a few days.
In a bowl, combine flour, 2 cups sugar, baking powder and salt. In a separate bowl, combine eggs, oil, orange juice and vanilla. Add flour mixture to the liquid mixture and mix well. In a bowl, toss apples with cinnamon and remaining 1/4 cup sugar. Spread a third of the batter in the bottom of a greased 10″ tube pan. Top with half of the apples. Repeat layers, carefully spreading the remaining batter over the apples. Bake at 350 degrees for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes. Invert onto a plate and dust with confectioners’ sugar if desired. Serve.
