Description

Dairy-free, super moist, apple banana muffins. A family favorite around here. Perfect for breakfast!

Ingredients

  • 2 cups Flour
  • 1-½ cup Apple Juice
  • ½ cups Sugar
  • 2 whole Bananas, Ripe And Mashed
  • 1 whole Apple, Diced
  • 4 teaspoons Baking Powder
  • ½ teaspoons Cinnamon

Preparation

Just toss everything together, put in muffin tins or liners, and bake at 325 for 35-45 minutes.

I agree with shawna! Being not too sweet was PERFECT. The only thing I will change next time is to NOT use the muffin liners..ugh, they stuck to them horribly. I’ll use the Baker’s Joy stuff to grease/flour the pans directly. I may even try mini loaf pans! This was a huge hit in our house. Thanks for sharing!

This recipe is great! I just made 2 batches for a womens’ event that I am catering. They are a perfect breakfast food because they are healthy and sweet, but not overly so. Very moist and yummy. Two very enthusiastic thumbs up! Thanks for sharing this one!

Great way to use up some produce on their final days! I added a sprinkle of brown sugar to the tops (and also followed previous reviewer and baked for only 30 minutes!). Yummy!

These are really nice muffins. I added some toasted, rougnhly chopped pecans to give them a bit of texture. The recipe made 12 nicely-sized muffins for me, and only took 30 minutes to bake.
