The idea for these muffins came from a restaurant in Raleigh, NC called The Rockford. They serve a to-die-for “ABC Sandwich” with the ABC being apple, bacon, and cheddar- on french toast type bread. I wanted to make this portable and a bit better for me, so I made it into muffins.
Combine flour, flax seed, wheat germ, baking powder, baking soda, and salt in a medium mixing bowl and whisk to combine. Set aside.
Combine the egg, butter, liquid smoke, bacon, apple, and cheese in a large mixing bowl and whisk to combine. Slowly add the first set (dry) ingredients to the second set of ingredients.
Pour into 6 greased large muffin pans, cooked for 20-25 minutes at 350, or until a toothpick comes out mostly clean.
Serve with maple syrup.

And if those are too hearty for you, I think you could probably also just use all purpose flour in place of the whole wheat and/or the flax/wheat germ

I am also familiar with the Rockford’s ABC sandwich… I am addicted and have been making it for years, since I moved away from Raleigh. Definitely will try these muffins– great idea!
