Description

I got this recipe from my good friend Marilyn, when I was only 21 and new to baking. The 7-up is the secret to making this bread so moist and delicious.

Ingredients

  • 4 cups Sifted Flour
  • ½ teaspoons Salt
  • 2 teaspoons Baking Powder
  • 2 teaspoons Baking Soda
  • 2 cups Mashed Bananas
  • 2 cups Sugar
  • 1 cup Butter, Softened
  • 4 whole Eggs
  • 2 teaspoons Pure Vanilla Extract
  • 1 cup 7-up
  • 1 cup Chopped Pecans
  • 1 cup Milk Chocolate Chips

Preparation

Sift together dry ingredients, set aside.

With fork, mash three to four very ripe bananas, measuring two cups.

Place mashed bananas in mixing bowl. Add sugar and stir until well combined. Gradually add butter, eggs, vanilla and 7-up. Mix until smooth.

Slowly add dry ingredients to banana mixture, mixing until well combined. Stir in chocolate chips and nuts.

Pour into two greased and floured bread pans.

Bake at 350 degrees (F) for 50-60 minutes or until a knife inserted comes out clean. Cool for 15 minutes before slicing. When bread is cool, wrap in plastic wrap.
