Description

Good, basic, delicious!

Ingredients

  • 5 whole Roma Tomatoes
  • ½ whole Large Onion
  • 2 whole Jalapenos
  • Lots Of Cilantro
  • Lime Juice
  • Salt To Taste

Preparation

Chop jalapenos, tomatoes and onions into a very small dice. (Leave seeds in your jalapenos for a hotter pico). Adjust amount of jalapenos to your preferred temperature. Next, chop up a nice-sized bunch of cilantro. Just remove and discard the long leafless stems before chopping. No need to remove the leaves from the stems completely. Place all of these ingredients together in a bowl and give it a good stir.

Squeeze the juice of half of one lime into the bowl. Add salt to taste and stir again.

What a great recipe! Even the tomato hating members of my family loved it. I used the juice of a whole lime and used 1 very ripe tomato and over a pint of grape tomatoes. I used a large bunch of cilantro and I think that’s what really pulls it together. I will be making this all summer. Thanks Ree for a simple and easy, but oh so delicious recipe!

Haha I agree with the first reviewer! I always make this when we’re having Mexican and think “whoa, there’s no way we’ll get through all of this.” Yet every time, the bowl is cleaned out! So nice and refreshing, I always add more than half a lime’s worth of juice though :)
